Fried tortillas with chocolate sauce

Ingredients:

    Chocolate sauce

  • 0.5 cup brown sugar
  • A pinch of coarse salt
  • 0.5 cup cocoa powder
  • 3 tablespoons unsalted butter
  • 0.5 tsp vanilla extract

    Sopapillas

  • Vegetable oil for frying
  • 4 wheat tortillas, 20–25 cm in diameter, cut into wedges or strips
  • Granulated sugar for sprinkling

Preparation:

  1. Prepare the sauce:

    Combine 1/4 cup water, brown sugar, and salt in a small saucepan. Bring to a boil, stirring until the sugar dissolves. Stir in the cocoa powder until smooth. Remove from heat and stir in the butter and vanilla. The sauce can be stored in the refrigerator in a sealed container for up to 3 days. Reheat before serving..
  2. In a large, deep frying pan, heat 1 cm of vegetable oil to 175°C on a deep-fry thermometer.
  3. Prepare sopapillas:

    Fry the tortillas in batches, turning once, until golden brown on both sides, 1–2 minutes per batch. Reheat the oil to 175°C between batches.
  4. Transfer to a paper towel-lined plate and sprinkle generously with sugar on both sides. Drizzle with chocolate sauce.
