All-Purpose Green Sauce

Ingredients:

  • 1 cup loosely packed fresh parsley leaves
  • 1 cup loosely packed baby spinach
  • 1 cup plain Greek yogurt, any fat content
  • 1/4 cup chopped fresh chives
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • A drop of hot sauce
  • 1 crushed clove of garlic

Preparation:

  1. Combine parsley, spinach, yogurt, green onions, olive oil, lemon juice, hot sauce, garlic, and 1 teaspoon salt in a blender or food processor and process until smooth and bright green.
  2. Transfer to a bowl or container, cover and refrigerate for at least 1 hour before serving. The sauce can be stored in a tightly sealed container in the refrigerator for up to 5 days or in the freezer for up to 1 month..
