Red Cabbage Coleslaw

Ingredients:

  • 2 tablespoons apple cider vinegar
  • 1 tbsp. honey
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon whole celery seeds
  • 0.5 tsp coarse salt
  • 0.5 tsp freshly ground black pepper
  • 2 large carrots, cut into strips
  • 2 cups shredded white cabbage
  • 2 cups shredded red cabbage

Preparation:

  1. Combine the apple cider vinegar and honey in a large bowl until smooth. Slowly pour in the olive oil, stirring constantly, to emulsify the dressing. Season with celery seeds, salt, and freshly ground black pepper. Stir to combine.
  2. Add the carrots and all the cabbage. Toss with the dressing and transfer to a serving platter.
