Jicama and Watermelon Salad

Ingredients:

  • 0.5 cup freshly squeezed orange juice + 1 teaspoon orange zest
  • 1/4 cup freshly squeezed lime juice + 1 tsp zest
  • 2 tablespoons of honey
  • 1 teaspoon ground black pepper
  • 1 jicama, cut into strips
  • 4 cups watermelon, cut into 5cm pieces.
  • 1/3 cup torn fresh mint leaves

Preparation:

  1. In a large bowl, combine citrus juices, honey, pepper, and salt. Add jicama, watermelon, and mint and toss to combine.
