Vanilla-raspberry milkshake with liqueur

Ingredients:

    Milkshake

  • 0.5 cups whole milk
  • Fresh raspberries, for decoration
  • 0.5 cups dry malt milk + extra for decoration
  • 4 cups French vanilla ice cream
  • 110 g raspberry liqueur, such as Chambord
  • Raspberry coulis to drizzle

    Raspberry coulis

  • 2 cups fresh raspberries
  • 0.5 cups of sugar
  • Zest of 1 lemon (2 tsp)
  • 4 tablespoons raspberry liqueur, such as Chambord

Preparation:

  1. Blend the milk and malted milk powder in a blender. Add the ice cream and liqueur. Blend until smooth and reaches your desired consistency.
  2. Pour a little raspberry coulis down the inside of each glass.
  3. Pour the cocktail into each glass. Garnish with a sprinkle of malted milk powder and a couple of raspberries.

    Raspberry coulis:
    Yield: 1 tbsp.

    Combine 1/4 cup water, raspberries, sugar, and lemon zest in a small saucepan. Bring to a boil and simmer for about 10 minutes. Remove from heat and let cool. Puree the mixture in a blender and strain into a small bowl. Add the liqueur and stir. Do not drive after drinking this cocktail.
