Ingredients:
- 2 New York steaks (each 220-280 g, 2 cm thick)
- 2 medium sprigs of thyme
- 1 large sprig of rosemary, cut in half
- 2 tablespoons unsalted butter, chilled
- Special equipment: 1 cast iron frying pan with a diameter of 30 cm.
Preparation:
- Sprinkle both sides of the steaks with 1 teaspoon salt and 1/4 teaspoon black pepper, then let stand at room temperature for 30 minutes.
- Meanwhile, position the oven rack in the middle position and place a 30cm cast iron skillet on it. Preheat the oven to 230°C.
- Carefully remove the hot skillet from the oven and place the steaks in it, spacing them out. Top each steak with a sprig of thyme, half a sprig of rosemary, and 1 tablespoon of chilled butter. Return the skillet to the oven and bake until the undersides are nicely browned, about 4 minutes.
- Carefully remove the pan from the oven and flip the steaks with tongs. Continue cooking until desired doneness is reached, about 2 minutes more for medium rare and 3 minutes more for medium. Remove the steaks from the pan and let them rest for 5-10 minutes before slicing and serving.
