Ingredients:
- 1/4 cup red wine vinegar
- 2 tablespoons Dijon mustard
- 2 tsp dried Italian herbs
- 3/4 cup extra-virgin olive oil
Preparation:
- In a small bowl, combine vinegar, mustard, dried herbs and a generous pinch of salt.
- Gradually whisk in the olive oil, starting with a few drops, then add the rest in a steady stream to create a smooth, slightly thick dressing. Add a couple of turns of the black pepper grinder.
