Ingredients:
- 1 small baguette
- 3 tablespoons extra-virgin olive oil
- 1/4 cup thinly sliced almonds with skins
- 1.5 cups fresh ricotta
- Zest of 1 lemon + extra for garnish
- Honey to drizzle
Preparation:
- Preheat the oven to 190°C (375°F). Slice the baguette diagonally into 0.8 cm (1/4 inch) thick slices. Place them on a baking sheet, drizzle with olive oil, and sprinkle with 0.5 teaspoon of salt. Bake until lightly browned, about 10 minutes. Meanwhile, place the almonds on a second baking sheet and lightly toast in the oven, about 8 minutes. Let the almonds and baguette slices cool.
- In a small bowl, combine the ricotta with the lemon zest and season with a pinch of salt and a little freshly ground black pepper. Spread the ricotta on the toast and drizzle with honey. Top with almonds and lemon zest, if using.
