Ingredients:
- 16 black tea bags
- 0.5 cups of sugar
- 1 large ripe peach, halved and sliced into 0.5cm thick slices.
- 1 lemon, cut in half
- Half a small bunch of mint, torn
Preparation:
- Make some tea:
Bring 8 cups of water to a boil, immediately remove from heat, and add the tea bags. Let steep for 5 minutes. Remove the tea bags (do not squeeze them) and let the brewed tea cool to room temperature.
- Meanwhile, prepare the simple syrup.:
Combine 0.5 cups of water with sugar and bring to a boil, stirring constantly, until all the sugar has dissolved. Pour into a large pitcher and let cool to room temperature.
- Preheat an outdoor grill to medium-high heat or heat a grill pan over medium-high heat. Place the peach wedges on the grill and grill until grill marks appear, 2 to 3 minutes per side. Grill the lemon halves, cut-side down, until charred, about 3 minutes.
- Add the roasted peach slices and mint to the sugar syrup in a pitcher. Squeeze the roasted lemons to extract the juice. Using a potato masher, mash the peach slices and mint. Pour in the cooled brewed tea, stir, and then refrigerate until completely chilled, about 2 hours. The longer the tea sits, the richer the flavor will be. Serve over ice.
