Spicy sweet popcorn on the stove topcook.tomathouse.com
Ingredients:
- 2 tablespoons of vegetable oil
- 2 tablespoons butter
- 0.5 tbsp. corn kernels for popcorn
- 3 tablespoons of sugar
- 1 teaspoon fine salt
- 1 teaspoon ground cinnamon
- 0.5 tsp cayenne pepper
Preparation:
- Place a potholder or kitchen towel, a paper grocery bag, or a large baking sheet on the counter. Heat vegetable oil in a large wok or heavy-bottomed skillet over medium heat. Drop a couple of corn kernels into the oil. Once they pop, proceed to the next step.
- Once the oil is hot enough, add the butter and stir quickly to prevent burning. Add all the popcorn at once and stir (the butter may not melt completely). Immediately add the sugar and stir again. Cover the pan and gently shake it back and forth on the burner, holding it in place with an oven mitt or towel. Continue shaking until all the popcorn has popped.
- As soon as the pauses between pops increase to 1-2 seconds, immediately turn off the heat. This means the popcorn is almost done. Be careful not to over-pop it. Transfer the popcorn to a paper bag or baking sheet and sprinkle with salt, cinnamon, and cayenne pepper. Let it cool for a few minutes before transferring it to a bowl. Caution: sugar makes the popcorn very hot!
