Caesar Salad Pizza with Creamy Parmesan Dressing topcook.tomathouse.com
Ingredients:
- 2 tablespoons extra-virgin olive oil
- 70 g of ready-made pizza dough at room temperature
- 2 large ox heart tomatoes, cut into 6-8 rounds
- 1/4 cup finely grated Parmesan
- 2 romaine lettuce hearts, cut into 1-inch-1/2-inch pieces (about 8 cups)
- 0.5 cup creamy Caesar dressing with Parmesan
- 1 cup shaved Parmesan (60 g) and 1 tbsp coarsely ground black pepper, for serving
Preparation:
- Preheat oven to 230°C.
- Spray a 25x37cm (9x14") baking pan or rimmed baking sheet with 1 tablespoon olive oil. Place the dough balls next to each other in the pan and pinch the edges to form one large piece of dough. Press and stretch the dough to fill the pan. If using a baking sheet, press and stretch the dough into a 25x37cm (9x14") rectangle.
- Brush the dough with the remaining 1 tablespoon of olive oil. Season with salt. Arrange the tomato slices on the dough in a single layer, making sure each slice has a tomato. Sprinkle with Parmesan cheese. Bake the pizza until golden brown, 25-30 minutes.
- Just before serving, toss the romaine lettuce in a large bowl with the Caesar dressing. Season with salt and pepper to taste. Arrange the lettuce on the pizza. Sprinkle with shaved Parmesan and coarsely ground black pepper. Slice the pizza and serve.
