Coriander-crusted Arctic Char with Baked Green Beans

Ingredients:

  • 450 g green beans, ends trimmed
  • 2 tablespoons extra-virgin olive oil
  • 0.5 cup finely chopped cilantro stems (about 1 bunch)
  • 3 tablespoons mayonnaise
  • 4 skinless Arctic char fillets, 170g each.
  • 2 tablespoons chopped cilantro leaves

Preparation:

  1. Preheat oven to grill mode and position the rack 5 cm from the heating element.
  2. Toss the beans with olive oil, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Arrange them in a single layer on a rimmed baking sheet. Grill the beans until crisp-tender and charred in spots, about 4 minutes.
  3. Mix chopped cilantro stems with mayonnaise. Sprinkle each fillet with a generous pinch of salt and black pepper, then spread the cilantro mixture over the fish pieces, coating them completely. Place the fillets on the beans and continue to fry until the fish is cooked through, 4-5 minutes. Sprinkle with chopped cilantro before serving.
