Chocolate sausage

Ingredients:

  • 1.5 cups coarsely chopped dark chocolate
  • 0.5 cup granulated sugar
  • 7 tablespoons unsalted butter, room temperature
  • 2 tbsp. brewed coffee
  • 2 tablespoons cocoa powder
  • 2 cups coarsely chopped biscotti cookies
  • 0.5 cup coarsely chopped pistachios
  • 0.5 cup coarsely chopped walnuts
  • 1/4 cup powdered sugar
  • Special equipmentkitchen string

Preparation:

  1. You will need a heatproof bowl for the chocolate, a medium bowl for creaming the sugar and butter, and a spatula.
  2. Place the chocolate in a medium heatproof bowl and microwave in 30-second intervals, stirring, until completely melted and smooth, about 3 minutes.
  3. In another medium bowl, beat the butter and granulated sugar with a mixer until smooth, about 3 minutes.
  4. Stir in melted chocolate, coffee, and cocoa powder until fully incorporated, scraping down the sides of the bowl as needed.
  5. Stir in the walnuts with a spatula,
  6. pistachios and biscotti.
  7. Mix well.
  8. Place the chocolate mixture on a large piece of plastic wrap.
  9. Form a sausage about 5 cm in diameter and 30 cm long.
  10. Wrap the sausage in plastic wrap and refrigerate until set, about 1 hour.
  11. When ready to serve, remove the film from the chocolate sausage and dust the sausage with powdered sugar.
  12. Tie with kitchen string to make it look like real salami.
