Asian Carrot Ginger Dressing

Ingredients:

  • 1 large carrot, peeled and coarsely chopped (about 100g)
  • Half a red apple, such as Gala, Honeycrisp or Fuji, peeled and coarsely chopped (about 100g)
  • 4 cm ginger root, peeled and coarsely chopped
  • 1 clove garlic, peeled
  • 1/4 cup white miso paste
  • 1/4 tbsp. rice vinegar without additives
  • 3 tablespoons dark sesame oil
  • Coarse salt and freshly ground black pepper

Preparation:

  1. Place carrots, apple, ginger, garlic, miso, rice vinegar, sesame oil, 1 teaspoon salt and 1/4 teaspoon black pepper in a blender.
  2. Blend until smooth. If necessary, stop the blender and scrape down the sides of the bowl with a silicone spatula to ensure the ingredients are completely combined. Season with salt and pepper to taste. Use the dressing immediately or transfer to a container, cover tightly, and refrigerate for up to 7 days..
