Ingredients:
- 4 cups large marshmallows (about 36)
- 2 tbsp. sugar
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- A pinch of coarse salt
- 3 cups white chocolate chips (about 500g)

Remove from heat, add the white chocolate chips and vanilla extract, and stir until the chocolate is completely melted.
- Pour the mixture into the prepared pan, sprinkle crushed cookies on top, and lightly press them into the toffee. Let cool to room temperature, then cover with plastic wrap and refrigerate until the toffee sets, about 1 hour. Cut into 2cm squares.
