Ingredients:
- 220 g whipped cream cheese
- 1 tbsp. l. brown sugar
- 3 tsp ground cinnamon, divided
- 1.5 tsp vanilla extract
- 16 slices Italian bread, 1 cm thick.
- 0.5 cup apricot jam or preserves
- 5 eggs
- 1 cup of milk
- 2 tablespoons butter, divided
Preparation:
- In a small bowl, combine cream cheese, brown sugar, 2 teaspoons cinnamon, and 1 teaspoon vanilla extract until smooth. Spread 2 tablespoons of cream cheese on each of 8 slices of bread. Spread 1 tablespoon of jam on each of the remaining 8 slices of bread. Press the slices with different fillings together to make 8 sandwiches.
- Using a whisk, beat the eggs in a 22x32cm baking dish. Add the milk, the remaining 1 teaspoon of cinnamon, and the remaining 1/2 teaspoon of vanilla extract. Dip the sandwiches in the egg mixture, soaking for 2 minutes on each side.
- In a large nonstick skillet, melt 1 tablespoon butter over medium-low heat. Place 4 sandwiches in the skillet. Cook for 4-5 minutes per side or until golden brown. Repeat with the remaining sandwiches, adding the remaining butter. Serve the French toast with maple syrup, if desired.
