Ingredients:
- Whites of 3 large eggs
- 0.5 cups of sugar
- 1/3 cup raisins
- 1/4 cup dark rum
- 1/8 tsp salt
- 1/4 tsp vanilla extract
- 400 g sweet coconut flakes
Preparation:
- Preheat oven to 160°C and line a baking sheet with parchment paper.
- In a large bowl, whisk the egg whites with the sugar, raisins, dark rum, salt, and vanilla extract until smooth; fold in the coconut.
- Drop the coconut mixture onto the baking sheet in 1-tbsp mounds, spacing them about 2.5 cm apart. Use your fingers to shape them into cones. Bake until golden brown around the edges, 20-25 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
