Healthy Mini Meatloaf with Cheese

Ingredients:

  • 1 cup small spinach
  • 1/3 cup fresh cilantro leaves
  • 1 small clove of garlic
  • 350 g lean ground beef
  • 220 g of ground turkey, 1% fat
  • 1/4 cup milk with 2% fat content
  • 3 tablespoons whole grain breadcrumbs
  • 1 tsp chili powder
  • 1 large egg, lightly beaten
  • 4 tsp Worcestershire sauce
  • 2 tsp red wine vinegar
  • 12 plum tomato slices (about 2 small tomatoes)
  • 5 tbsp. l. grated cheddar
  • Green salad for serving, optional

Preparation:

  1. Preheat oven to 200°C. Line a baking sheet with parchment paper.
  2. Combine the spinach, cilantro, and garlic in a food processor and finely chop. Transfer to a medium bowl. Add the ground beef, ground turkey, milk, breadcrumbs, chili powder, egg, 2 teaspoons Worcestershire sauce, 1/2 teaspoon salt, and a pinch of freshly ground black pepper. Mix thoroughly with your hands.
  3. Combine the vinegar with the remaining 2 teaspoons of Worcestershire sauce. Divide the meat mixture into 4 portions and form into 2.5 cm thick oval patties. Place on the prepared baking sheet.
  4. Top each meatloaf with 3 tomato slices and drizzle with a little vinegar and Worcestershire sauce mixture. Bake until the meatloaf reaches an internal temperature of 165°F (74°C), 18-20 minutes.
  5. Drizzle with a little vinegar and Worcestershire sauce, top each meatloaf with a slice of cheddar, and continue baking until the cheese is melted, another 2 minutes. Pat the bottom of each meatloaf with a paper towel to remove excess water. Serve with a salad, if desired.
