Healthy Mini Meatloaf with Cheese topcook.tomathouse.com
Ingredients:
- 1 cup small spinach
- 1/3 cup fresh cilantro leaves
- 1 small clove of garlic
- 350 g lean ground beef
- 220 g of ground turkey, 1% fat
- 1/4 cup milk with 2% fat content
- 3 tablespoons whole grain breadcrumbs
- 1 tsp chili powder
- 1 large egg, lightly beaten
- 4 tsp Worcestershire sauce
- 2 tsp red wine vinegar
- 12 plum tomato slices (about 2 small tomatoes)
- 5 tbsp. l. grated cheddar
- Green salad for serving, optional
Preparation:
- Preheat oven to 200°C. Line a baking sheet with parchment paper.
- Combine the spinach, cilantro, and garlic in a food processor and finely chop. Transfer to a medium bowl. Add the ground beef, ground turkey, milk, breadcrumbs, chili powder, egg, 2 teaspoons Worcestershire sauce, 1/2 teaspoon salt, and a pinch of freshly ground black pepper. Mix thoroughly with your hands.
- Combine the vinegar with the remaining 2 teaspoons of Worcestershire sauce. Divide the meat mixture into 4 portions and form into 2.5 cm thick oval patties. Place on the prepared baking sheet.
- Top each meatloaf with 3 tomato slices and drizzle with a little vinegar and Worcestershire sauce mixture. Bake until the meatloaf reaches an internal temperature of 165°F (74°C), 18-20 minutes.
- Drizzle with a little vinegar and Worcestershire sauce, top each meatloaf with a slice of cheddar, and continue baking until the cheese is melted, another 2 minutes. Pat the bottom of each meatloaf with a paper towel to remove excess water. Serve with a salad, if desired.
