Ingredients:
- 900 g unpeeled potatoes
- 1 cup whole milk
- 110 g unsalted butter
- 0.5 cup finely chopped fried bacon
- 1-2 tablespoons chopped chipotle peppers in adobo sauce
Preparation:
- Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pan (optional, press them through a potato masher or puree them in a vegetable grinder). Mash the potatoes with the milk and butter using a fork or potato masher. Add the bacon, chopped chipotle peppers, 2 tablespoons of salt, and a pinch of freshly ground black pepper.
