Caesar Mac and Cheese with Kale

Ingredients:

  • 4 cups whole milk
  • 340 g of pasta (about 3 cups)
  • 8 cups chopped kale
  • 220 g mild cheddar, grated (about 2 cups)
  • 90 g semi-skimmed mozzarella, grated (about 3/4 cup)
  • 60 g cream cheese, cut into small pieces
  • 1 cup creamy Caesar salad dressing with Parmesan
  • 2 tbsp. l. grated parmesan
  • 1 cup spiced croutons

Preparation:

  1. In a medium saucepan, combine milk and pasta and bring to a boil over medium heat, stirring frequently to prevent pasta from sticking.
  2. Reduce heat and simmer, stirring frequently, until the pasta is tender and the milk has thickened to the consistency of heavy cream, 4 to 5 minutes. Add the kale and continue to simmer until completely wilted, about 2 minutes.
  3. Reduce heat, add cheddar, mozzarella, cream cheese and 1.5 teaspoons salt and mix until smooth, thick and creamy.
  4. Add the creamy Caesar dressing with Parmesan cheese. Remove from heat and sprinkle with Parmesan cheese, croutons, and freshly ground black pepper. The mac and cheese will thicken as it cools; thin it with a little hot water, if desired.
