Lemon cilantro sangria

Ingredients:

  • 1 cup of sugar
  • 1 cup loosely packed fresh cilantro leaves
  • 1 bottle (750 ml) Pinot Grigio or other high-acid white wine
  • 0.5 cup lemon liqueur, such as Limoncello
  • 2 x 300ml cans of lemon sparkling water, such as San Pellegrino Limonata
  • 0.5 cups of soda
  • 2 lemons, thinly sliced

Preparation:

  1. In a small saucepan, combine the sugar with 0.5 cups of water and bring to a boil, stirring constantly until the sugar dissolves. Remove from heat and add the cilantro. Let cool, then pour the syrup into a three-liter pitcher.
  2. Pour the wine, liqueur, lemon soda, and club soda into a pitcher and stir. Add the lemons and cover the pitcher with plastic wrap. Refrigerate the sangria to chill for at least 4 hours or overnight.
  3. To serve, fill 8 glasses halfway with ice, then top each glass with sangria and lemons.
