Ingredients:
- 0.5 cups semi-skimmed ricotta
- 0.5 tsp finely grated lemon zest
- 0.5 tsp vanilla extract
- 1 tbsp + 1 tsp apricot jam
- 1/3 cup blueberries
- 12 frozen mini filo pastry tartlets, thawed
- 2 tsp pine nuts or chopped almonds
Preparation:
- In a small bowl, combine the ricotta, lemon zest, vanilla extract, and 1 tablespoon of apricot jam. Combine the blueberries in another small bowl with the remaining 1 teaspoon of apricot jam.
- Spoon ricotta into the filo pastry tartlets. Top with a few blueberries and some nuts. Tartlets can be assembled in advance and stored in the refrigerator for up to 2 hours..
