Peanut Butter Chocolate Coin Cookies

Ingredients:

  • 1.5 cups premium flour
  • 1 teaspoon of baking soda
  • 1 teaspoon coarse salt
  • 110 g unsalted butter, room temperature
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar
  • 0.5 cup creamy peanut butter (see note)
  • 1 tsp vanilla extract or paste
  • 1 large egg
  • 1/2 cup blue and white sprinkles or nonpareils (see note)
  • 18-20 chocolate coins, unwrap and freeze

Preparation:

  1. In a medium bowl, whisk together the flour, baking soda, and salt until evenly combined. In the bowl of a stand mixer, place the butter, granulated sugar, and brown sugar. Beat with the paddle attachment on medium-high speed until pale and fluffy, about 5 minutes.
  2. Add the peanut butter and continue beating until fluffy, about 1 minute. Add the vanilla extract and egg and mix until incorporated. Then, with the mixer on low speed, gradually add the dry ingredients and mix until smooth.
  3. Cover with plastic wrap and refrigerate for at least 1 hour or overnight.
  4. Position a rack in the middle of the oven and preheat the oven to 350°F (175°C). Lightly spray a baking sheet with cooking spray. Pour the blue and white sprinkles into a medium bowl.
  5. Scoop out 20 grams of dough (about 1.5 tablespoons) and form into a ball. Continue scooping and rolling the dough into balls until you've used about half of it. Roll each ball in the sprinkles and place them on the prepared baking sheet, spacing them about 5 cm apart. Refrigerate the remaining dough while you bake the first batch of cookies.
  6. Bake, rotating the baking sheet halfway through, until the cookies are puffed and lightly golden, about 12 minutes. Immediately press a chocolate coin into the center of each hot cookie. Let cool on the baking sheet for 10 minutes.
  7. Then transfer to wire racks to cool completely. Once the pan is cool, spray it again with cooking spray and repeat with the remaining dough, sprinkles, and chocolate coins.

    Note

    For this recipe, use regular commercial peanut butter instead of natural. It's sweeter and has a better texture. Blue and white Hanukkah sprinkles can be found in stores during the holidays. Alternatively, you can mix regular white sprinkles with blue ones.
