Ingredients:
Biscuits
- 2 cups of premium flour + extra for working with the dough
- 2 tsp baking powder
- 1/4 teaspoon of baking soda
- 1 teaspoon fine salt
- 12 tablespoons chilled unsalted butter, diced
- 2 tbsp chopped fresh dill
- 0.5 cups of sour milk or kefir + extra for greasing the dough
Honey oil
- 4 tbsp unsalted butter, softened
- 2 teaspoons of honey
- 1/4 teaspoon sea salt
Preparation:
- Preheat oven to 220°C.
- Combine the flour, baking powder, baking soda, and fine salt in a food processor. Add the butter and chop into pea-sized pieces. Add the dill, then slowly whisk in the sour milk until the dough is smooth. Transfer it to a floured work surface and knead three to five times. Form the dough into a disk.
- Roll out the dough to a thickness of about 1 cm. Using a round cookie cutter or a 6 cm glass, cut out circles from the dough. Gather the scraps, roll them out, and cut out more circles. Place the buns on a baking sheet, brush with buttermilk, and bake until golden brown, 10-12 minutes.
- Meanwhile, prepare the honey butter.:
In a bowl, mix the butter, honey, and sea salt until smooth. Serve with warm buns.
