Caramelized Onion Dip

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 tbsp. l. olive oil
  • 1.3 kg of onions, cut in half and cut into half rings 0.5 cm wide.
  • 2 tbsp. l. brown sugar
  • 1/4 cup red wine vinegar
  • 3 drops hot sauce, optional
  • 1 package (220 g) softened cream cheese
  • 1 cup (220 g) sour cream
  • Chopped chives, optional

Preparation:

  1. In a medium heavy-bottomed saucepan, heat the butter and olive oil over medium-high heat. Add the onion and brown sugar. Cook, stirring constantly, until the onion is soft and golden, 15-20 minutes. Season with salt to taste.
  2. Add the vinegar and simmer until it evaporates. Add hot sauce, if using. Remove from heat and let the onions cool slightly.
  3. In a large bowl, whisk the cream cheese until smooth. Add the sour cream and caramelized onions. Season with salt and pepper to taste. Sprinkle with chives, if using.
  4. Serve the dip warm or refrigerate to serve chilled.
