Kebab with grilled sausages and pasta salad topcook.tomathouse.com
Ingredients:
- 8 Italian grill sausages (sweet, spicy, or both), halved diagonally
- 1 cup pennette pasta or other small pasta
- 2 tbsp. l. grated parmesan cheese
- Special spray for lubrication
- 10 small bell peppers (8 left whole, 2 thinly sliced)
- 3 tbsp. extra virgin olive oil
- Coarse salt
- 2 cups baby spinach
- 1/4 cup pitted green olives, thinly sliced
- 1 crushed clove of garlic
- 2 tablespoons finely chopped fresh basil
- Freshly ground pepper
Preparation:
- Preheat a grill pan over medium heat and coat with cooking spray. Thread 2 sausage halves and 1 whole bell pepper onto each of 8 metal skewers.
Brush the kebabs with 1 tablespoon of olive oil and grill them on a grill pan, turning as needed, until charred. Cook for 20 minutes, covering the pan when the kebabs are halfway done.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook according to package directions.
In a large bowl, combine 2 chopped bell peppers, spinach, olives, garlic, basil, and the remaining 2 tablespoons olive oil until well combined.
Drain the pasta and immediately add it to the bowl with the spinach. Stir in salt and pepper and sprinkle with grated cheese. Serve the pasta salad with the kebabs.
