Ingredients:
For burgers:
- 1,350 gr. ground turkey (white and dark meat)
- 1 tbsp coarse salt
- 1/2 tsp ground paprika
- 1/2 tsp freshly ground black pepper
- 1/2 tsp granulated garlic
For the glaze:
- 250 g of orange confiture with peels
- 1 tbsp Dijon mustard
- 2 tablespoons of vegetable oil
- 1/2 cup diced onion
- 2 crushed cloves of garlic
- 1/4 jalapeno pepper, crushed and seeded
- 1/8 tsp chili powder
- 1/4 tsp freshly ground black pepper
For burgers:
- 6 large hamburger buns
- Romaine lettuce, tomato and red onion, sliced into circles
- Pickled cucumbers for serving
Preparation:
- Make cutlets: In a small bowl, combine salt, paprika, pepper, and granulated garlic. Form the ground turkey into 6 patties and sprinkle both sides with the spice mixture.
- Prepare the glaze: Heat vegetable oil in a medium skillet over medium-high heat. Add the onion, garlic, and jalapeño and cook for 10 minutes, until the onion is translucent. Add the marmalade, mustard, black pepper, and chili powder and cook for 2 minutes. Set aside.
- Preheat the grill to high heat. Grill the patties for 5 minutes on each side, until the char marks are clearly visible. Reduce the heat to medium and cook for another 12 minutes, or until cooked through, turning the patties after 5 minutes. Meanwhile, toast the buns.
- Serve the burgers on buns. Top with glaze, lettuce, tomato, and red onion. Serve with pickles.
