Tea cake in a cup

Ingredients:

  • 1 bag of black tea
  • 0.5 cup hot milk
  • 0.5 cups of sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon lemon juice
  • 0.5 cups flour
  • 1/8 tsp baking soda

Preparation:

  1. Steep 1 black tea bag (such as Earl Grey) in 1/2 cup hot milk for about 4 minutes. Remove the tea bag and whisk the milk in a bowl with 1/2 cup sugar, 1/4 cup vegetable oil, 1 egg, 1 teaspoon lemon juice, and 1/2 teaspoon vanilla extract until smooth, about 2 minutes.
  2. Stir in 1/2 cup flour, 1/8 teaspoon baking soda, and a pinch of salt. Divide the batter among 4 greased microwave-safe teacups, filling them about two-thirds full.
  3. Microwave one at a time until the cake is puffed and a toothpick inserted into the center comes out clean, about 2 minutes; let cool slightly. Top each serving with whipped cream and a sprinkle of cinnamon.
