Ingredients:
- 8 cups baguette, cut into 2.5cm cubes, stale or toasted (about 250g)
- 900 g ripe tomatoes, cut into 2.5 cm pieces (about 4 cups)
- 1 cup canned white beans, rinsed
- 1 cup shredded grilled chicken
- 1 cup thinly sliced Iranian or hothouse cucumber
- 0.5 cup chopped fresh parsley
- 0.5 cup chopped roasted red pepper
- 1/4 cup chopped fresh basil
- 1/4 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 3/4 cup olive oil
- 1 teaspoon finely chopped fresh oregano
Preparation:
- Place bread cubes in a large bowl, add tomatoes, beans, chicken, cucumbers, parsley, pepper and basil and toss to combine.
- In a medium bowl, combine the vinegar and Dijon mustard. Stir in the olive oil and oregano.
- Drizzle the dressing over the salad and toss. Season with salt and pepper and toss again.
