Breakfast burgers with bacon, eggs, and cheese

Ingredients:

  • 700 g of ground beef with 20% fat content
  • 8 slices of bacon
  • 4 slices of cheddar
  • 4 soft hamburger buns, cut in half horizontally
  • 60 g unsalted butter, melted
  • 4 large eggs
  • 1/3 cup hot Jamaican ketchup

Preparation:

  1. Preheat oven to 175°C.
  2. Form the ground beef into 4 patties, each approximately 7.5 cm in diameter. Season the patties generously with salt and black pepper and set aside.
  3. Place the bacon in a large nonstick skillet and cook over medium heat until browned and crispy, about 4 minutes per side. Transfer to a paper towel-lined plate to drain any excess fat. Reserve about 1 tablespoon of the rendered fat in the skillet; drain the rest and set aside. Increase the heat under the skillet to medium-high.
  4. Place the patties in the skillet and cook until golden brown on the outside and medium-rare on the inside, about 4 minutes per side. Transfer the cooked patties to a rimmed baking sheet and top with a slice of cheese. Brush the insides of the buns with melted butter and place them butter-side up on a second baking sheet. Bake until the cheese is melted, about 3 minutes, and the buns are lightly toasted, about 10 minutes.
  5. Meanwhile, wipe out the skillet. Heat 1 tablespoon of the reserved bacon drippings over medium-high heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 5 minutes. Season with salt and pepper to taste.
  6. Place a patty on each bottom bun and top with 2 slices of bacon and a fried egg. Spread a small amount of the top bun. ketchup and cover the burger.
