Caprese with mini bocconcini topcook.tomathouse.com
Ingredients:
- Juice of 1 lemon
- 1 small clove of garlic, grated or crushed
- 1 cup basil leaves (about 20 pcs.) + extra for serving
- 1/3 cup extra-virgin olive oil
- 2 cups cherry tomatoes (preferably different colors), halved
- 1 cup bocconcini mozzarella, patted dry and cut in half
Preparation:
- Combine the lemon juice, garlic, and basil in a food processor or blender. Blend, adding olive oil until smooth. Combine the tomatoes, cheese, and dressing in a bowl. Season with salt and pepper to taste. Garnish with torn basil leaves.
