Blueberry cobbler

Ingredients:

    Blueberry

  • 8 cups fresh blueberries
  • 2/3 cup sugar
  • 1 tbsp lemon juice
  • 1/4 cup premium flour
  • 2 tablespoons chilled salted butter, cut into pieces
  • Vanilla ice cream, for serving

    Dough

  • 2.5 cups premium flour
  • 2.5 tbsp sugar + extra for sprinkling
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 165g chilled salted butter, cut into pieces
  • 3/4 cup milk
  • 1 large egg

Preparation:

  1. Preheat oven to 220°C.
  2. Blueberry:

    Place the blueberries in a large bowl, sprinkle with sugar, and drizzle with lemon juice. Add the flour and stir.

    Dough:

    In a separate bowl, combine the flour, sugar, baking powder, and salt. Stir well, then add the cold butter and, using a pastry blender, cut the butter into the flour mixture.
  3. In a small bowl, whisk the milk and egg together, then pour it into the flour and butter mixture and stir to form a dough. It should be lumpy and bumpy!
  4. Place the blueberries in a 22 x 32 cm baking dish and sprinkle them with pieces of butter. Then separate the pieces of dough and arrange them on top. Sprinkle with sugar.
  5. Cover loosely with foil and bake for 20 minutes, then remove the foil and bake until the cobbler is lightly browned, about 25 minutes more. Serve warm or at room temperature with a large scoop of vanilla ice cream.
