Steak with fried eggs topcook.tomathouse.com
Ingredients:
- Sirloin steak weighing 450g (approximately 2.5cm thick)
- 1 tbsp. vegetable oil
- 2 tablespoons unsalted butter
- 8 large eggs
Preparation:
- Preheat oven to 175°C.
- Heat a large cast-iron skillet over medium heat for about 5 minutes. Increase the heat to high and add the vegetable oil. Season the steak generously with salt and black pepper. Place the steak in the skillet and cook, turning once, until well-browned, about 4 minutes per side. Transfer the skillet to the oven and cook for another 5 minutes until medium-rare.
- Transfer the steak to a cutting board. Cover loosely with foil and let rest for 10 minutes before slicing.
- While the steak is resting, fry the eggs. Heat two skillets over medium heat. Melt 1 tablespoon of butter in each skillet. Crack 4 eggs into each skillet. Season lightly with salt and pepper and fry until the whites are set, about 3.5 minutes. If you want the yolks to set, cover the skillets and continue frying for another 1-2 minutes. Transfer the eggs to warm plates.
- Slice the steak diagonally into thick slices. Fan the steak slices onto plates and serve immediately.
