Ingredients:
- 1 ball of store-bought pizza dough
- Extra virgin olive oil, to drizzle
- 2 cups whole or semi-skimmed ricotta
- 2 cloves garlic, finely chopped
- A handful of parsley, finely chopped
- 2 cups grated mozzarella or provolone cheese, 1 package
- 10 fresh basil leaves (0.5 cup), thinly sliced
Preparation:
- Preheat oven to 220°C, placing a pizza stone inside, if using.
- Stretch the dough into a round shape and transfer it to a baking sheet or pizza peel. Prick the dough several times with the tines of a fork. Drizzle with extra-virgin olive oil. Mix the ricotta with the garlic and parsley, and season with salt and pepper to taste.
- Spread the ricotta over the dough. Top with mozzarella or provolone. Bake until crisp, 20 minutes. Sprinkle the finished pizza with chopped basil leaves, slice, and serve.
