Maple-Glazed Turkey Drumsticks topcook.tomathouse.com
Ingredients:
- 4 turkey drumsticks
- 2.5 liters of water
- 3/4 cup salt
- 3/4 tbsp. maple syrup
- 3/4 cup bourbon
- 2 tbsp. grainy mustard
- 1 tbsp. black peppercorns
- 2 tsp red pepper flakes
- 1 teaspoon dried thyme
- 1 tbsp granulated garlic
- 3 cloves
- 1 bay leaf
Preparation:
- In a medium saucepan, heat all ingredients except the turkey over low heat. Cook, stirring occasionally to dissolve the salt. Once the salt has dissolved, remove the brine from the heat and let it cool. Place the turkey legs in a large zip-lock plastic bag and pour the brine over them. Seal the bag tightly and place it in a bowl (to prevent leaks). Refrigerate for 24 hours.
- After 24 hours, remove the turkey, pour out the brine and preheat the oven to 175°C.
- Place the turkey legs in a roasting pan with a rack fitted, leaving space between them for even roasting. Roast for 90 minutes. Remove the legs from the oven, transfer to a serving platter, and serve hot or cooled.
