Ingredients:
- 450 g orange carrots, unpeeled
- 450 g rainbow carrots, unpeeled
- 1 tsp. grated orange zest
- 2 tablespoons freshly squeezed orange juice
- 1 tsp. fleur de sel
Preparation:
- Preheat oven to 230°C.
- Remove the tops and wash the carrots thoroughly with a brush. Cut the carrots into long, diagonal slices. They should be roughly equal in size, about 10 cm long and 1 cm wide.
- Place the carrots on a baking sheet, drizzle with 3 tablespoons of olive oil, and sprinkle with 1 teaspoon of coarse salt and 0.5 teaspoon of black pepper. Mix well with your hands and spread into a single layer.
- Bake for 15-20 minutes, stirring once, until carrots are lightly browned and tender.
- If I use citrus juice in cooking, I often add the zest for even more flavor." says the chef. Sprinkle with orange zest, fleur de sel, and orange juice, and mix well. Serve the carrots hot or at room temperature.
