Ingredients:
- 450 g Yukon Gold potatoes, diced
- 0.5 cup frozen green peas
- Half a small red onion, thinly sliced
- 3 tablespoons white wine vinegar
- 450 g of ground turkey
- 0.5 cup tikka masala sauce
- 1/3 cup + 2 tbsp chopped fresh cilantro
- 3/4 tsp ground cumin
- 3 tablespoons unsalted butter
- 4 sesame seed hamburger buns, toasted
- 1/3 cup mayonnaise
Preparation:
- Preheat the oven to broil. Line a baking sheet with foil. Place the potatoes in a medium saucepan and cover with cold water to a level 1 inch (2.5 cm) above the potatoes; season with salt. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, 10-12 minutes, adding the green peas one minute before they're done. Drain the potatoes and peas.
- Meanwhile, combine the red onion, vinegar, 2 tablespoons water, and a large pinch of salt in a bowl; set aside. Toss the ground turkey with 1/4 cup tikka masala, 1/2 teaspoon salt, 2 tablespoons cilantro, and 1/4 teaspoon cumin. Form into four 1/4-inch-thick patties. Place on the prepared baking sheet and brush with the remaining 1/4 cup tikka masala. Grill until cooked through, 6 to 8 minutes.
- In the same pan, melt the butter over medium-high heat. Add the remaining 0.5 teaspoon cumin, then add the potatoes and peas. Cook, stirring, for 2-3 minutes. Stir in the remaining 1/3 cup cilantro; season with salt to taste.
- Drain the red onion. Place the patties on mayonnaise-and-red-onion buns. Serve with potatoes and green peas.
