Ingredients:
- 4 natural pork cutlets on the bone, weighing 180-220 g each (2.5 cm thick)
- 1 cup strong coffee, cool
- 170 g molasses (about 0.5 cup)
- 2 tablespoons apple cider vinegar
- 1 tbsp Dijon mustard
- 2 cloves garlic, crushed
- 0.5 tsp ground ginger
- 6-8 sprigs of fresh thyme
Preparation:
- In a 4-quart zip-lock bag, combine coffee, molasses, vinegar, mustard, garlic, 1 teaspoon salt, 1/2 teaspoon black pepper, ginger, thyme, and pork chops; seal and shake to coat. Marinate in the refrigerator for at least 2 hours or overnight.
- Preheat the grill to medium-high heat. Remove the pork from the bag. Pour the marinade into the pan and cook over medium heat, stirring occasionally, until the marinade reduces to 1/2 cup, 12-15 minutes. Remove the thyme sprigs.
- Grill the pork chops for 3-4 minutes per side, or until the internal temperature reaches 145°F (64°C). Let rest for 5 minutes; serve with the glaze.
