Salmon for the children's table topcook.tomathouse.com
Ingredients:
- 4 wild salmon fillets, 150-170g each, skinless
- 2 tbsp vegetable oil + extra for greasing
- 4 tablespoons soy sauce
- Juice of 2 lemons
- Half an onion, chopped
- 2 tablespoons light brown sugar
- 2 cloves garlic, crushed
- 1 tsp. dark sesame oil
Preparation:
- In a bowl or large zip-lock bag, combine 2 tablespoons of vegetable oil, soy sauce, lemon juice, onion, brown sugar, garlic, sesame oil, and black pepper to taste. Add the fish and toss to coat completely. Refrigerate for at least 3 hours, but preferably longer.
- Preheat the oven to broil and line a baking sheet with foil. Place the fish on the foil (don't pour out the marinade) and brush with vegetable oil. Grill for 5-7 minutes, or until the salmon is opaque. Meanwhile, strain the marinade and simmer in a saucepan over medium heat until the liquid has evaporated slightly. Serve the fish with the sauce.
