Oatmeal cookies with grated apple

Ingredients:

  • 2 and 1/4 cups flour
  • 1 cup oatmeal
  • 1 teaspoon ground cinnamon
  • 3/4 tsp baking powder
  • 0.5 tsp of soda
  • 0.5 tsp salt
  • 1/4 tsp ground allspice
  • 165g unsalted butter, melted and cooled slightly
  • 0.5 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 Fuji or Gala apple, coarsely grated
  • 2 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp. milk

Preparation:

  1. Position oven racks in the upper and lower thirds of the oven; preheat to 350°F (175°C). Line 2 baking sheets with parchment paper. In a medium bowl, combine the flour, oats, cinnamon, baking powder, baking soda, salt, and allspice. In a separate bowl, combine the butter, brown and white sugars, and eggs; beat until smooth. Add the grated apple and vanilla extract, then fold in the flour mixture and knead the dough.
  2. Drop 1 heaping tablespoon of the batter onto the prepared baking sheets, spacing them about 2.5 cm (1 inch) apart. Bake until the cookies are set around the edges, 10-12 minutes, rotating the baking sheets halfway through. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack and cool completely.
  3. Prepare the glaze:


    Mix powdered sugar and milk in a bowl; pour icing over cookies.
