Blondie cake with apples and toffee

Ingredients:

  • 1 cup flour
  • 0.5 tsp coarse salt
  • 1/4 tsp baking powder
  • 6 tablespoons unsalted butter
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 apple, peeled and finely chopped
  • 1/3 tbsp. iris granules

Preparation:

  1. Preheat oven to 350°F (175°C). Line a 9-inch square baking dish with foil, leaving a 2-inch overhang on both sides; spray lightly with cooking spray and set aside.
  2. In a small bowl, combine the flour, salt, and baking powder. In a medium saucepan, melt the butter over medium heat and cook, swirling occasionally, until it begins to darken. Remove from the heat and stir in the brown sugar and vanilla extract until completely melted; let cool slightly. Add the eggs and beat until smooth. Fold in the flour mixture, then the apple and toffee. Pour the batter into the prepared pan and smooth the top.
  3. Bake the blondies until the edges are set and the tops are lightly browned, about 25 minutes. Transfer to a wire rack and let cool completely in the pan. Remove from the pan by pulling the foil and cut into squares.
