Creamy green beans with fried shallot topping

Preparation:

Boil 1.7 lbs. green beans for 6-8 minutes. Drain in a colander and immediately plunge into ice water, then drain and pat dry. Toast 1 tsp. ground cinnamon in a skillet with 2 tsp. olive oil for 1 minute. Mix with 1/2 cup Greek yogurt and 1 tsp. salt, then toss with the beans. Dredge 2 chopped shallots in flour and fry in a skillet with olive oil for 3 minutes; sprinkle over the beans.
