Chilled cucumber salad

Ingredients:

  • 5 small cucumbers, sliced ​​into rounds (5 cups)
  • 1 cup white vinegar
  • 1.5 cups of sugar
  • 1 teaspoon celery seeds
  • 1/4 cup vegetable oil
  • 1 medium sweet onion, thinly sliced
  • 1 large red or yellow bell pepper, thinly sliced

Preparation:

  1. In a medium saucepan, bring the vinegar, sugar, celery seed, vegetable oil and 1 teaspoon salt to a boil over high heat, then remove the saucepan from the heat and let the mixture cool for 20 minutes.
  2. In a large bowl, combine the sliced ​​cucumbers, onions, and bell peppers with the marinade and refrigerate overnight. Serve the salad cold.

    Note

    Before slicing cucumbers, prick the skin with a fork, but don't peel them. If possible, try Kirby or Iranian cucumbers. They're smaller than regular cucumbers and very crisp and delicious. Perfect for salads!
