Preparation:Boil 1 pound diced red potatoes in salted water until tender; drain. Fry 4 slices finely chopped bacon until crisp; discard the rendered fat, reserving 2 tablespoons in the pan. Add 1 bunch chopped green onions; fry them. Stir in 1/4 cup water, 2 tablespoons white wine vinegar, and 2 teaspoons each Dijon mustard and sugar and bring to a boil. Stir in 1/4 cup each chopped parsley and gherkins, potatoes and bacon; season with salt and pepper to taste. Ingredients:
