Grilled zucchini with delicious lemon salt topcook.tomathouse.com
Ingredients:
- 6 medium zucchini
- 1/4 cup olive oil
- Grated zest of 3 lemons (about 3 tbsp) + juice of 2 lemons
Preparation:
- Trim the ends of the zucchini and cut them lengthwise into quarters. Place them in a very large resealable plastic bag (or two regular-sized bags). Pour in the olive oil, then add 1 teaspoon of salt, 1 teaspoon of black pepper, 1 tablespoon of lemon zest, and lemon juice. Seal the bag and toss everything inside to coat the zucchini. Let marinate for 15-20 minutes.
- Preheat the grill to medium heat. Grill the zucchini, turning occasionally, until tender, being careful not to brown them, 12-15 minutes. Transfer the cooked zucchini to a plate.
- Place the remaining lemon zest on a cutting board and sprinkle with 1 tablespoon of salt. Chop the zest and salt with a knife to create lemon salt. Add more salt if needed. Sprinkle the fried zucchini with lemon salt.
