Blueberry Ginger Mojito topcook.tomathouse.com
Ingredients:
Ginger syrup
- 1/4 cup grated fresh ginger
- 1 cup granulated sugar
- 1 cup cold water
Mojito
- 1 cup fresh blueberries
- 1 lime, cut into wedges
- 20-24 fresh mint leaves
- 120 ml ginger syrup
- 120 ml of vodka
- 150 ml of sparkling water
- Ice cubes
- Blueberries, for serving
- Mint leaves, for serving
Preparation:
- Peel and grate the ginger and add it to the saucepan along with the sugar and cold water. Bring to a boil and stir until the sugar dissolves. Cover and let steep for 15 minutes. Strain and refrigerate.
- Add blueberries, lime wedges, and fresh mint leaves to a glass (or pitcher). Stir with a wooden spoon to break up the blueberries and release their essential oils and aroma from the mint and lime. When filling pitchers, you can cover them at this point and refrigerate them until ready to serve.
- Just before serving, add ginger syrup, vodka, and sparkling water to a pitcher. Stir quickly, then pour into glasses with ice cubes. Garnish with a handful of fresh blueberries and mint leaves.
- This recipe makes 2 tall mojito glasses, but you can use this ratio to fill pitchers (depending on the size of your pitcher, you can double or triple the recipe).
- Combine blueberries, mint leaves, and lime wedges in a pitcher and stir with the back of a wooden spoon. When ready to serve, add vodka, ginger syrup, and club soda. Stir and pour into glasses with ice cubes. Garnish each glass with fresh blueberries and a sprig of fresh mint.
