Ingredients:
Meat
- 1 beef tenderloin weighing 1 kg, cut in half and sliced into 2.5 cm thick slices.
- Garlic-Mustard Glaze, recipe below
Garlic-mustard glaze
- 4 cloves garlic, finely chopped
- 1/4 cup grainy mustard
- 2 tablespoons Dijon mustard
- 2 tsp paprika
- 1/4 teaspoon coarse salt
- 1/4 tsp ground black pepper
- 1 tbsp. lightly salted soy sauce
- 2 tablespoons white wine vinegar
- 1 tbsp. honey
- Special equipment: 15 cm long wooden skewers, soaked in cold water for 30 minutes
Preparation:
- Preheat the grill to high heat. Thread 2 pieces of beef onto 2 skewers, laying the meat flat. Generously brush both sides with the garlic-mustard glaze. Grill for 2-3 minutes per side, until crispy and medium-rare, brushing with any remaining glaze as needed. Remove from the grill and serve.
Garlic Mustard Glaze:Combine all ingredients in a small bowl. Cover and let sit at room temperature for 30 minutes before using.
